Cucumber Tomato Salad Recipe

Fresh, crisp, and refreshing, this cucumber tomato salad is the perfect side dish for any meal. Tossed in a light vinaigrette, it's simple and bursting with flavor.

Equipment

  • Cutting board
  • Sharp knife
  • Large mixing bowl
  • Small whisk or fork
  • Measuring cups and spoons

Ingredients
  

  • 2 large cucumbers sliced
  • 4 medium tomatoes chopped or sliced
  • ½ red onion thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar or lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional: fresh parsley or basil for garnish

Instructions
 

  • Prepare the Vegetables:
  • Wash the cucumbers, tomatoes, and onion. Slice the cucumbers into rounds, chop or slice the tomatoes, and thinly slice the red onion. Place them in a large mixing bowl.
  • Make the Dressing:
  • In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper. Adjust seasoning to taste.
  • Combine the Salad:
  • Pour the dressing over the vegetables in the mixing bowl. Toss gently to coat all the ingredients evenly.
  • Garnish and Serve:
  • If desired, garnish with chopped fresh parsley or basil. Serve immediately, or refrigerate for 20–30 minutes for the flavors to meld.
