This Cucumber, Tomato, and Onion Salad is a light and refreshing side dish. Packed with crisp cucumbers, juicy tomatoes, and zesty onions, it’s perfect for summer meals or as a healthy addition to any spread.

Equipment

  • Large mixing bowl
  • Whisk or fork (for the dressing)
  • Knife and cutting board

Ingredients
  

  • 2 large cucumbers thinly sliced
  • 3 medium tomatoes diced or sliced
  • 1 small red onion thinly sliced
  • 2 tablespoons fresh parsley chopped (optional)
  • For the Dressing:
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar or apple cider vinegar
  • 1 teaspoon sugar optional, for a hint of sweetness
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions
 

  • Step 1: Prepare the Vegetables
  • Wash and slice the cucumbers, tomatoes, and onion.
  • Place them in a large mixing bowl. Add the chopped parsley if using.
  • Step 2: Make the Dressing
  • In a small bowl, whisk together olive oil, vinegar, sugar, oregano, garlic powder, salt, and black pepper until well combined.
  • Step 3: Combine and Toss
  • Pour the dressing over the vegetables.
  • Gently toss everything together until the veggies are evenly coated.
  • Step 4: Chill and Serve
  • Cover and refrigerate the salad for at least 20 minutes to let the flavors meld.
  • Serve cold as a refreshing side dish.
