  • 1 pineapple, diced Fresh pineapple preferred, but canned pineapple in juice can be substituted.
  • 2 pieces cucumbers, diced
  • 1 piece red bell pepper, chopped
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped Can be swapped with parsley if preferred.
  • 1 piece lime, juiced

  1. Begin by prepping your ingredients. Dice the pineapple, cucumbers, and red bell pepper into bite-sized pieces. Slice the red onion thinly, and chop the fresh cilantro.
  2. In a large mixing bowl, combine the diced pineapple, cucumbers, bell pepper, and red onion. Give it a gentle toss to evenly distribute everything.
  3. Squeeze the juice of one lime over the salad mix. Season with salt and pepper to your liking.
  4. Toss in the chopped cilantro for a final burst of flavor.
  5. Give everything a final toss, taste, and adjust the seasoning if needed. Serve immediately for the freshest experience or refrigerate briefly for a chilled option.

Notes

It's best enjoyed fresh, but leftovers can be kept in an airtight container in the refrigerator for up to 2 days. Reheating is not recommended. For extra crunch, prep the salad right before serving and add lime juice and salt just before serving to prevent sogginess.
