  • 2 pounds boneless, skinless chicken thighs (ensure they are Halal)
  • 2 cups mixed vegetables (such as bell peppers, carrots, and peas)
  • 1 tablespoon olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste salt and pepper
  • 1 cup chicken broth
  • 1/2 cup panko bread crumbs (ensure they’re Halal)

Method
 

Preparation
  1. Start by cutting the chicken into bite-sized pieces and chopping your vegetables. Having everything prepped allows for a smoother cooking process.
Sautéing
  1. In your Instant Pot, set it to the 'sauté' mode. Add olive oil, and once hot, add the chicken. Sprinkle with garlic powder, onion powder, paprika, salt, and pepper. Sauté for about 5-7 minutes until the chicken is browned.
Cooking
  1. Toss in the mixed vegetables and pour the chicken broth over the top. Give it a gentle stir to combine everything.
  2. Seal the Instant Pot lid and set it to 'manual' mode at high pressure for 12 minutes.
  3. Once finished, carefully do a quick pressure release to avoid overcooking the chicken and veggies.
Final Touch
  1. Open the lid and sprinkle panko bread crumbs over the chicken and vegetables. If desired, toss it back into the sauté mode for around 3-5 minutes until the crumbs are crispy.
  2. Sprinkle with fresh parsley if desired, and it’s ready to be served!

Notes

For best results, avoid overcrowding the Instant Pot and keep an eye on cooking times to ensure chicken doesn’t overcook. Leftovers can be stored in an airtight container for up to three days or frozen for longer storage.
