Preparation
  1. Start by seasoning the chicken thighs with salt, pepper, and a drizzle of olive oil, ensuring even coating.
Cooking the Chicken
  1. Preheat your grill to medium-high heat. Place the seasoned chicken thighs skin-side down on the grill.
  2. Cook for about 7-9 minutes, or until the skin is crispy and golden.
  3. Turn the chicken over and continue grilling for an additional 7-9 minutes or until the internal temperature reaches 165°F (75°C).
Cooking the Corn
  1. If using fresh corn, bring a pot of water to a boil, add the corn, and cook for 4-5 minutes. For frozen corn, follow package instructions. Drain and set aside.
Preparing Lime-Basil Butter
  1. In a small saucepan, melt the unsalted butter over low heat.
  2. Once melted, stir in lime juice and chopped basil. Mix thoroughly and season with a pinch of salt.
Assembly
  1. Once the chicken is fully cooked, remove it from the grill and let it rest for a few minutes.
  2. Serve the grilled chicken thighs alongside the corn, generously drizzling with lime-basil butter.
