Method
Cooking the Gnocchi
- Bring a large pot of salted water to a boil. Add the gnocchi and cook according to the package instructions (usually about 2-4 minutes). Once they float to the surface, they’re done. Drain and set aside.
Sautéing the Spinach
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant but not browned. Add the chopped spinach and cook until wilted (about 2-3 minutes). Remove from the skillet and place aside.
Crisping the Gnocchi
- In the same skillet, add another tablespoon of olive oil. Add the cooked gnocchi in a single layer—be sure not to overcrowd the pan! Let them cook without stirring for about 3-4 minutes or until they’re golden brown and crispy. Flip them using a spatula and crisp the other side.
Combining and Serving
- Add the sautéed spinach back into the skillet with the crispy gnocchi. Gently toss to combine. Add the crumbled feta, salt, pepper, and red pepper flakes if using. Toss gently until warmed through (about 1-2 minutes).
- Serve immediately while hot and enjoy your delicious creation!
Notes
Use fresh ingredients for the best flavor. Don't overcrowd the pan when cooking the gnocchi to ensure they achieve the perfect crunch. Leftovers can be stored in an airtight container for up to 3 days and can be reheated in a skillet for best results.
