Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
For the Cheesecake Filling
  • 8 oz cream cheese, softened
  • ¾ cup caramel sauce (plus extra for drizzling)
For Topping
  • to taste Sea salt, for sprinkling

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).
  3. Add the egg and vanilla extract and mix until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined.
  5. In a different bowl, combine the softened cream cheese with ½ cup of caramel sauce, mixing until smooth and creamy.
Forming and Baking
  1. Scoop about 2 tablespoons of dough, flatten slightly in your hand, and add a dollop of the cheesecake filling in the center.
  2. Encase the filling by folding the dough around it and rolling it back into a ball. Place on the prepared baking sheet.
  3. Bake the cookies for 10 to 12 minutes, or until edges are golden but centers are still soft.
  4. Remove from oven, drizzle additional caramel sauce immediately, and sprinkle with sea salt. Allow to cool for about 5 minutes before transferring to a wire rack.

Notes

For best results, ensure that butter and cream cheese are at room temperature before mixing. Avoid overbaking for soft cookies.
