Crockpot Loaded Steak and Potato Bake

This Crockpot Loaded Steak and Potato Bake is a hearty, easy-to-make meal featuring tender bites of beef, soft seasoned potatoes, melty cheese, crispy bacon, and a sprinkle of green onions. It's everything you love in a loaded baked potato — made effortless in the slow cooker!

Ingredients
  

  • Serves 4–6
  • Main ingredients:
  • 600 –800 g 1.5–2 lbs steak (sirloin, ribeye, or chuck), cut into bite-sized cubes
  • 900 g 2 lbs potatoes (Yukon Gold or red), diced
  • 1 small onion chopped
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & black pepper to taste
  • cups shredded cheddar cheese
  • 4 –6 slices of bacon cooked and crumbled
  • 2 –3 green onions sliced
  • Optional: ½ tsp cayenne or chili flakes for spice

Equipment

  • Slow cooker / Crockpot
  • Large mixing bowl
  • Cutting board & knife
  • Skillet (optional for browning steak or bacon)
  • Aluminum foil (optional)

Method
 

  1. Prep the ingredients:
  2. Wash and dice the potatoes into small chunks (no need to peel).
  3. Cube the steak and chop the onion.
  4. (Optional) Sear the steak in a hot skillet for 1–2 minutes for added flavor.
  5. Toss everything together:
  6. In a large bowl, mix potatoes, steak, onion, olive oil, garlic powder, paprika, salt, pepper, and chili flakes (if using).
  7. Layer in the Crockpot:
  8. Spray the slow cooker insert with cooking spray or line with foil.
  9. Add the mixture to the crockpot and spread evenly.
  10. Cook:
  11. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are fork-tender and steak is cooked through.
  12. Add the toppings:
  13. In the last 15–30 minutes of cooking, sprinkle cheese over the top. Cover and let melt.
  14. Just before serving, add crumbled bacon and green onions.
  15. Serve:
  16. Spoon into bowls and enjoy as-is, or serve with sour cream or ranch dressing on the side.

Notes

Customize the cheese — try mozzarella, pepper jack, or a mix.
Make it creamy: Add a dollop of sour cream or a splash of cream cheese in the last hour.
Add-ins: Mushrooms, bell peppers, or broccoli can be mixed in for extra veggies.
Great for meal prep — leftovers reheat well for up to 3 days in the fridge.
