  • 1/2 cup fresh lemon juice
  • 1/4 cup capers, drained
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

Preparation
  1. Season the boneless, skinless chicken breasts with salt and pepper to taste.
  2. In a separate bowl, mix the chicken broth, fresh lemon juice, capers, and garlic powder. Whisk until well combined.
  3. Place the seasoned chicken breasts in the crockpot and pour the lemon-caper sauce over them, ensuring they're well covered.
Cooking
  1. Set your crockpot to low and cook for 4-6 hours, or on high for 2-3 hours, until the chicken is tender and fully cooked.
Serving
  1. Once cooked, shred or slice the chicken as desired and spoon sauce over the top. Garnish with freshly chopped parsley.

Notes

For substitutions, olives can replace capers. Chicken thighs can be used for a richer flavor. Avoid opening the crockpot lid during cooking to maintain heat. Leftovers store in an airtight container for up to 3 days or freeze for up to 3 months.
