  • 1.5 pounds boneless, skinless chicken breasts
  • 2 cups fresh or frozen broccoli florets
  • 1 cup long-grain white rice, rinsed
  • 4 cups chicken broth
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 2 cups shredded cheddar cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

Preparation
  1. Start by rinsing the rice and cutting the chicken into bite-sized pieces.
Layering in the Crockpot
  1. Place the chicken pieces at the bottom of the crockpot.
  2. Add the rinsed rice on top, followed by the broccoli florets.
Mixing the Sauce
  1. In a separate bowl, combine the chicken broth, cream of chicken soup, garlic powder, salt, and pepper. Blend it well and pour it over the layered ingredients in the crockpot.
Cooking
  1. Set your crockpot on low for 6-8 hours or high for 3-4 hours.
Adding Cheese
  1. About 15 minutes before serving, sprinkle the shredded cheddar cheese on top and cover until melted and gooey.

  1. Stir everything together, and it’s ready to be plated and enjoyed!

Notes

Store leftovers in an airtight container for up to 3-4 days in the refrigerator. To reheat, warm in the microwave or on the stove, adding chicken broth if needed. Freezable for up to three months.
