  • 1.5 lbs boneless, skinless chicken breast
  • 2 cups cooked rice (white or brown)
  • 2 cups broccoli florets (fresh or frozen)
  • 2 cups shredded cheddar cheese divided
  • 1 can cream of chicken soup (10.5 oz) can use homemade version
  • 1 cup chicken broth

Method
 

Preparation
  1. Cook the rice according to package instructions and set it aside. If using fresh broccoli, chop it into small florets.
Layering
  1. In the bottom of your crockpot, place the raw chicken breast, followed by the cooked rice and broccoli florets.
  2. In a separate bowl, mix together the cream of chicken soup, chicken broth, and half of the shredded cheese. Pour this mixture over the chicken, rice, and broccoli.
Seasoning and Cooking
  1. Sprinkle salt, pepper, and any additional seasonings (like garlic powder) over the top for extra flavor.
  2. Cover and cook on low for about 4-5 hours or on high for 2-3 hours until the chicken is tender and easily shredded.
Finishing Touches
  1. In the last 15 minutes of cooking, sprinkle the remaining shredded cheese on top, cover, and allow it to melt.
Serving
  1. Once everything is cooked to perfection, give it a gentle stir and serve it hot.

Notes

For best results, if using frozen broccoli, add it toward the end of cooking to prevent overcooking. Ensure chicken is cooked to an internal temperature of 165°F. Feel free to mix in other vegetables for added nutrition!
