  • 2 pounds beef chuck roast (cut into bite-sized pieces) Use halal-certified beef.
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 4 cups beef broth Look for a halal brand.
  • 1 cup carrots (sliced)
  • 1 cup celery (sliced)
  • 1 tablespoon Worcestershire sauce Halal-friendly.
  • 1 teaspoon dried thyme
  • Salt to taste Salt
  • Pepper to taste Pepper
  • 12 ounces egg noodles
  • 2 tablespoons cornstarch (mixed with water for thickening sauce, optional)

Preparation
  1. Begin by cutting the beef chuck roast into bite-sized pieces. Dice the onion, mince the garlic, and slice the carrots and celery so everything is ready to go.
  2. If you have the time, searing the beef in a hot pan with a little oil adds a wonderful depth of flavor. Brown the beef for about 5 minutes and then transfer it to the crockpot.
Cooking
  1. Place the seared (or raw) beef into the slow cooker. Add the diced onions, minced garlic, sliced carrots, and celery.
  2. Pour the beef broth over the meat and vegetables. Add the Worcestershire sauce, dried thyme, salt, and pepper. Give it all a good stir to combine.
  3. Set your crockpot on low and let it cook for 6-8 hours, or on high for 3-4 hours. You’ll want the beef to be tender and the flavors to meld beautifully.
  4. About 30 minutes before serving, cook the egg noodles according to package instructions in a separate pot. Drain and then stir them into the crockpot. Mix gently to combine and let them soak up the broth for those last 30 minutes.
  5. If you prefer a thicker sauce, mix cornstarch with a small amount of water in a bowl. Stir this mixture into the crockpot during the final 15 minutes of cooking.
  6. Taste and adjust seasoning before serving. Ladle the Crockpot Beef and Noodles into bowls and garnish with fresh chopped parsley, if desired. Enjoy the delightful comfort!

Notes

Feel free to substitute beef with other halal-certified meats like chicken or lamb if preferred. Enhance flavor by adding a bay leaf or other dried herbs.
