Ingredients
  

For the meatballs
  • 1 lb ground beef or beef alternative
  • ½ cup breadcrumbs
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp Worcestershire sauce
  • Salt and pepper, to taste
For the cooking broth and topping
  • 2 cups beef broth
  • 1 cup caramelized onions (store-bought or homemade)
  • 1 cup mozzarella cheese, shredded
  • Fresh parsley, for garnish

Method
 

Preparation
  1. In a large bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, onion powder, garlic powder, Worcestershire sauce, salt, and pepper. Mix until just combined—don’t overwork that meat!
  2. Scoop about a tablespoon of the mixture into your hands and roll it into a ball. Repeat with the remaining meat mixture until all the meatballs are formed.
  3. In your Crock Pot, add the beef broth and caramelized onions. This will serve as the flavorful base for your meatballs.
Cooking
  1. Carefully place the meatballs into the slow cooker, making sure they’re mostly submerged in the broth.
  2. Set your slow cooker to low and cook for 6-8 hours or on high for about 3-4 hours.
  3. About 15 minutes before serving, sprinkle the shredded mozzarella cheese over the meatballs. Close the lid and let it melt into gooey perfection.
Serving
  1. Once the cheese is melted and bubbly, garnish with fresh parsley before serving. Enjoy your flavorful creation!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. You can also freeze the meatballs for up to 2-3 months. For a healthier version, consider using ground turkey or chicken instead of beef.
