  • 2 lbs potatoes, diced Russets work well for creaminess
  • 1 cup onion, chopped
  • 4 cups chicken broth Can also use vegetable broth for a vegetarian option
  • 8 oz cream cheese
  • 1 cup cheddar cheese, shredded
  • 1 cup cooked chicken, cubed Can substitute with plant-based chicken for vegetarian
  • 1/2 cup sour cream
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Chives for garnish

Method
 

Preparation
  1. Dice the potatoes into even pieces for uniform cooking.
  2. Chop the onion into small bits.
Cooking
  1. Add the diced potatoes, chopped onion, and chicken broth into the Crock Pot.
  2. Cut the cream cheese into chunks and place it on top of the potato mixture.
  3. Sprinkle in the garlic powder, then season with salt and pepper according to your taste.
  4. Cover the Crock Pot and set it on low for 6-8 hours or high for 3-4 hours.
  5. Once it’s done cooking, mix in the shredded cheese and sour cream until everything is melted and well combined.
  6. Ladle the soup into bowls and top with chives for a fresh finish.

Notes

For substitutions, Greek yogurt or non-dairy cream cheese can be used instead of cream cheese. Resist the urge to peek often for best results.
