- Dice the potatoes into even pieces for uniform cooking.
- Chop the onion into small bits.
Cooking
- Add the diced potatoes, chopped onion, and chicken broth into the Crock Pot.
- Cut the cream cheese into chunks and place it on top of the potato mixture.
- Sprinkle in the garlic powder, then season with salt and pepper according to your taste.
- Cover the Crock Pot and set it on low for 6-8 hours or high for 3-4 hours.
- Once it’s done cooking, mix in the shredded cheese and sour cream until everything is melted and well combined.
- Ladle the soup into bowls and top with chives for a fresh finish.
Notes
For substitutions, Greek yogurt or non-dairy cream cheese can be used instead of cream cheese. Resist the urge to peek often for best results.
