Crock Pot Cheesy Scalloped Potatoes Recipe Made Easy

This Crock Pot Cheesy Scalloped Potatoes recipe is the ultimate comfort food! Creamy, cheesy, and easy to make, it’s a perfect side dish for holidays, potlucks, or weeknight dinners.

Ingredients
  

  • 3 lbs russet potatoes peeled and thinly sliced
  • 1 medium onion thinly sliced
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup heavy cream
  • 1 cup milk
  • 3 tbsp unsalted butter melted
  • 2 tbsp all-purpose flour
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika optional, for garnish
  • Fresh parsley optional, for garnish

Equipment

  • Crock pot (6-quart or larger)
  • Mixing bowl
  • Whisk
  • Measuring cups and spoons
  • Mandoline slicer or sharp knife

Method
 

  1. Prepare the sauce
  2. In a mixing bowl, whisk together the heavy cream, milk, melted butter, flour, minced garlic, salt, and black pepper until smooth.
  3. Layer the ingredients
  4. Grease the inside of the crock pot with cooking spray. Arrange a layer of sliced potatoes at the bottom, followed by a layer of onions. Sprinkle with cheddar cheese and mozzarella cheese. Repeat the layers until all ingredients are used, finishing with cheese on top.
  5. Pour the sauce
  6. Evenly pour the prepared cream sauce over the layered potatoes and cheese, ensuring it seeps down to the bottom.
  7. Cook the potatoes
  8. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender and easily pierced with a fork.
  9. Serve and garnish
  10. Once cooked, sprinkle with paprika and fresh parsley for garnish (optional). Serve warm and enjoy!
