  • 2 cups cooked rice Can use white or brown rice.
  • 1 tablespoon olive oil
  • Salt To taste.
  • Pepper To taste.
  • 1 tablespoon soy sauce (low-sodium preferred)
  • 1 teaspoon honey or maple syrup
Toppings
  • 1 piece avocado, sliced
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 2 pieces green onions, chopped
  • Sesame seeds For garnish.

Preparation
  1. Start by cooking your rice according to package instructions. Once done, fluff with a fork and set aside.
  2. Rub the salmon fillets with olive oil, and season generously with salt and pepper.
Cooking
  1. Heat a non-stick skillet over medium-high heat. Place the salmon skin-side down and sear for about 4-5 minutes, until the skin is crispy. Flip the salmon and cook for another 2-3 minutes until the other side is cooked but still moist.
  2. In a small bowl, whisk together soy sauce and honey (or maple syrup) until well combined. Drizzle this sauce over your cooked salmon for an extra layer of flavor.
Assembly
  1. To assemble, place a scoop of cooked rice in each bowl. Top with your crispy salmon, avocado slices, shredded carrots, and cucumbers. Sprinkle with chopped green onions and sesame seeds.
