Preparation
- Ensure your mashed potatoes are free of lumps. If necessary, whisk them a bit to achieve a smoother consistency.
- Take a handful of the mashed potatoes and shape them into fry-like sticks, about 4 inches long and 1 inch thick.
- Set up breading stations: In one bowl, place the flour mixed with salt and pepper, in another bowl add the beaten eggs, and in a third bowl pour in the breadcrumbs mixed with garlic powder if desired.
- Roll each potato stick first in the flour, then dip it in the egg, and finally coat it in breadcrumbs. Place them on a baking tray.
Cooking
- In a large skillet, heat about an inch of oil over medium-high heat. To test if the oil is hot enough, sprinkle a bit of flour into the oil; if it sizzles, it’s ready.
- Carefully lower a few fries into the oil, ensuring not to overcrowd the skillet. Fry for about 3-4 minutes per side or until golden brown and crispy.
- Once crispy, remove the fries with a slotted spoon and drain on a paper towel-lined plate. Serve immediately and enjoy!
Notes
Use cold mashed potatoes for better shape retention and good-quality oil for optimal texture; do not overcrowd the skillet while frying. Experiment with different toppings for variety.
