Ingredients
  

For the Fries
  • 4 cups leftover mashed potatoes (cooled) Ensure mashed potatoes are smooth and creamy.
  • 1/2 cup all-purpose flour For coating, seasoned with salt and black pepper.
  • 1 cup breadcrumbs (preferably panko) For extra crispiness.
  • 2 large eggs Beaten.
  • to taste Salt and black pepper
  • 2 teaspoons garlic powder Optional for added flavor.
  • Oil for frying Canola or vegetable oil works beautifully.

Preparation
  1. Ensure your mashed potatoes are free of lumps. If necessary, whisk them a bit to achieve a smoother consistency.
  2. Take a handful of the mashed potatoes and shape them into fry-like sticks, about 4 inches long and 1 inch thick.
  3. Set up breading stations: In one bowl, place the flour mixed with salt and pepper, in another bowl add the beaten eggs, and in a third bowl pour in the breadcrumbs mixed with garlic powder if desired.
  4. Roll each potato stick first in the flour, then dip it in the egg, and finally coat it in breadcrumbs. Place them on a baking tray.
Cooking
  1. In a large skillet, heat about an inch of oil over medium-high heat. To test if the oil is hot enough, sprinkle a bit of flour into the oil; if it sizzles, it’s ready.
  2. Carefully lower a few fries into the oil, ensuring not to overcrowd the skillet. Fry for about 3-4 minutes per side or until golden brown and crispy.
  3. Once crispy, remove the fries with a slotted spoon and drain on a paper towel-lined plate. Serve immediately and enjoy!

Notes

Use cold mashed potatoes for better shape retention and good-quality oil for optimal texture; do not overcrowd the skillet while frying. Experiment with different toppings for variety.
