Ingredients
  

Main Ingredients
  • 2 pieces frozen chicken breasts (about 1 pound) Use boneless skinless chicken breasts for best results.
  • 1 cup chicken broth Vegetable broth can be used for a lighter taste.
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt
  • to taste pepper
  • optional favorite seasoning blend Think Italian herbs or Cajun spice!

Method
 

Preparation
  1. Pour one cup of chicken or vegetable broth into the base of the Instant Pot.
  2. Place the frozen chicken breasts directly into the broth.
  3. Drizzle olive oil over the chicken, then sprinkle garlic powder, onion powder, salt, and pepper (and any optional seasoning).
  4. Close the lid and ensure the valve is set to sealed.
Cooking
  1. Set the Instant Pot to cook on high pressure for 10 minutes.
  2. Allow the pressure to naturally release for 5 minutes before quick-releasing any remaining pressure.
Crisping
  1. Remove the chicken from the pot and set it on a baking sheet.
  2. Broil in the oven for 4-5 minutes until the outside becomes crispy and golden brown.
Serving
  1. Slice the chicken and add your favorite toppings, serving it alongside some veggies, rice, or in a wrap.

Notes

For storing, keep leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months. Reheat in the oven to maintain crispiness.
