  • 1 cup polenta
  • 4 cups water
  • 1 teaspoon salt
  • 2 tablespoons olive oil For frying

Preparation
  1. In a large saucepan, bring 4 cups of water and 1 teaspoon of salt to a boil.
  2. Gradually whisk in 1 cup of polenta, stirring continuously until it thickens (about 5 minutes).
  3. Once thickened, pour the polenta into a lightly greased square baking dish and spread it evenly. Allow it to cool completely—this should take about 20 minutes.
  4. Once cooled, cut the polenta into rectangles or squares, depending on your preference.
Cooking
  1. In a shallow dish, place the breadcrumbs. Carefully dip each piece of polenta into the olive oil, then coat it well with breadcrumbs to ensure a crispy crust.
  2. In a skillet, heat olive oil over medium heat. Add the breadcrumb-coated polenta and fry until golden brown (about 4-5 minutes on each side). You may need to do this in batches.
  3. Once perfectly crispy, place on paper towels to drain any excess oil. Spoon warm marinara sauce over the polenta just before serving.
