  • 4 cups cooked chicken, shredded or diced You can use rotisserie chicken for convenience
  • 1 can(10.5 oz) condensed cream of chicken soup
  • 1 cup sour cream
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 package(6 oz) stuffing mix
  • 2 cups mixed veggies (peas, carrots, or corn) Frozen works too
  • 1/2 cup shredded cheddar cheese Optional for extra creaminess

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, cream of chicken soup, and sour cream. Stir in chicken broth, garlic powder, onion powder, salt, and pepper. Add the mixed veggies and mix until everything is evenly combined.
  3. Pour the chicken mixture into a greased 9x13-inch baking dish and spread it out evenly.
  4. In a separate bowl, prepare the stuffing mix according to package instructions and spread it evenly over the chicken mixture in the baking dish.
Baking
  1. Place the casserole in the preheated oven and bake for 25 to 30 minutes, or until the stuffing is golden brown and crispy.
  2. Let it cool for a few minutes before serving. Optionally, sprinkle some shredded cheddar cheese on top just before serving.

Notes

Using a rotisserie chicken can significantly cut down on prep time. Substitute mixed vegetables based on preference. For a creamier casserole, consider adding more sour cream or cream cheese. Store leftovers in an airtight container for up to 3 days. Freeze the casserole before baking for longer storage.
