Preparation
- Preheat your oven to 400°F (200°C). Pound the chicken breasts to an even thickness for uniform cooking. Season both sides with salt and pepper.
- In one bowl, combine breadcrumbs and grated Parmesan cheese. Optionally, prepare an egg wash for better adhesion of breadcrumbs.
Cooking
- Dip the chicken in the egg (if using), then coat with the breadcrumb and Parmesan mixture, pressing gently to ensure it sticks.
- Heat olive oil in a skillet over medium heat. Once hot, add the breaded chicken pieces and cook for 4-5 minutes on each side until golden brown. Optionally, finish cooking in the oven if the chicken is thick.
- On a baking sheet, place the fried chicken and top each piece with slices of fresh mozzarella and tomato, then sprinkle with fresh basil.
- Return the baking sheet to the oven for about 5 minutes, or until the cheese is melted and slightly golden.
Serving
- Drizzle with olive oil or balsamic glaze before serving and enjoy the combination of crunchy chicken and fresh toppings.
Notes
Choose quality ingredients and try to use panko breadcrumbs for extra crunch. Make the chicken ahead of time and store in the fridge to save on prep time at dinner.
