  • 2 large onions Peeled and sliced into ½ inch thick rings.
  • 1 cup all-purpose flour Mixed with salt and pepper for coating.
  • 1 cup breadcrumbs For coating the onion rings.
  • 1 cup shredded cheddar cheese Combined with breadcrumbs.
  • 2 large eggs Whisked with buttermilk.
  • 1 cup buttermilk For dipping.
  • to taste Salt and pepper For seasoning.
  • as needed Oil for frying About ¾ inch deep in the skillet.

Preparation
  1. Begin by peeling and slicing your large onions into thick rings, aiming for about ½ inch thickness.
  2. Set up three bowls: one with flour mixed with salt and pepper, another with whisked eggs and buttermilk, and the last with breadcrumbs and shredded cheddar cheese.
  3. Take each onion ring, dip it in the flour mixture, then in the egg mixture, and finally coat it in the breadcrumb and cheese mixture.
Cooking
  1. In a large skillet, add enough oil to cover the bottom completely and heat over medium heat until shimmering.
  2. Carefully place a few coated onion rings into the hot oil and fry for about 3-4 minutes on each side until golden-brown.
  3. Remove the onion rings using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
  4. Serve warm, paired with your favorite dipping sauces.

Notes

For a gluten-free version, use almond flour or gluten-free breadcrumbs. To reheat, place leftover onion rings in an oven set to 375°F for about 10 minutes.
