  • 2 medium zucchinis, grated
  • 1 cup breadcrumbs (panko for extra crunch!)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Olive oil spray (for that lovely golden finish)

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  • Grate your zucchinis and place them in a clean kitchen towel. Squeeze out the excess moisture to ensure your fritters are crispy.
  • In a mixing bowl, combine the grated zucchini, breadcrumbs, Parmesan, egg, onion, minced garlic, oregano, salt, and pepper. Stir until well-blended.
  • Using your hands, scoop some of the mixture and shape it into small patties—about 2 inches in diameter.

Baking

  • Arrange the fritters on the prepared baking sheet. Lightly spray with olive oil for extra crunch.
  • Bake in the oven for 15-20 minutes, flipping halfway through, until golden brown and crispy.

Notes

Squeeze moisture thoroughly from the zucchini for a crisp texture. Experiment with spices and herbs for flavor variations. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
