Ingredients
  

For the filling
  • 2 cups Shredded Cabbage
  • 1 cup Carrots, grated
  • 1 cup Bell Pepper, diced
  • 1/2 cup Green Onions, sliced
  • 2 tablespoons Soy Sauce
  • 2 cloves Garlic, minced
  • 1 teaspoon Ground Ginger
  • to taste Salt and Pepper
For assembly and cooking
  • 10-12 pieces Egg Roll Wrappers
  • as needed Cooking Spray For coating the egg rolls

Method
 

Preparation
  1. In a large skillet, heat a splash of water over medium heat. Add the shredded cabbage, grated carrots, diced bell pepper, green onions, minced garlic, and ground ginger. Season with salt and pepper. Sauté for about 5-7 minutes until the veggies are tender and flavorful.
Assembling
  1. Lay one egg roll wrapper on a clean surface. Spoon 2-3 tablespoons of the vegetable mixture into the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly to seal. Repeat with the remaining wrappers and filling.
Cooking
  1. Preheat your air fryer to 380°F (190°C). Lightly coat the egg rolls with cooking spray, then place them in a single layer in the air fryer basket. Cook for 10-12 minutes, turning halfway through until they are golden brown and crispy.
Serving
  1. Allow the egg rolls to cool for a couple of minutes. Serve with your favorite dipping sauces and enjoy your delicious, crispy creations!

Notes

Keep egg roll wrappers covered with a damp cloth while assembling to prevent them from drying out. Don’t overfill to avoid broken wrappers during cooking. Feel free to experiment with different fillings like shredded chicken or shrimp.
