Ingredients

For the chicken
  • 1.5 pounds chicken pieces (such as drumsticks or thighs), skin-on or skinless
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika (optional for a smoky flavor) Optional ingredient
  • 1 teaspoon dried herbs (such as thyme or oregano)
  • 1 cup breadcrumbs (preferably whole wheat or gluten-free) Ensure they're Halal certified

Method

Preparation
  1. Start by rinsing your chicken pieces under cold water. Pat them dry with paper towels and place them in a large bowl.
  2. Drizzle the olive oil over the chicken, followed by the salt, pepper, garlic powder, onion powder, paprika, and dried herbs. Make sure each piece is generously coated with the spices and oil.
Coating
  1. Take your seasoned chicken and dip each piece into the breadcrumbs, ensuring that they are fully covered. You may need to press lightly to ensure the crumbs stick well to the chicken.
Cooking
  1. Preheat your air fryer to 380°F (190°C) for about 5 minutes.
  2. Place the breaded chicken pieces in a single layer inside the air fryer basket. Make sure they are not overcrowded, as this will allow the hot air to circulate and create that crispiness.
  3. Cook for 25-30 minutes, flipping the chicken halfway through for an even cook. Look for a golden brown color.
  4. Use a meat thermometer to ensure the internal temperature has reached at least 165°F (75°C).
  5. Once cooked, let the chicken rest for a few minutes before serving.

Notes

Feel free to swap in your favorite spices or add some heat with cayenne pepper. Avoid skipping the oil for that crispiness, and don't overcrowd the air fryer.
