- 2 large cucumbers thinly sliced
- 3 ripe tomatoes chopped or sliced
- ½ red onion thinly sliced
- ¼ cup fresh parsley or basil chopped
- ¼ cup feta cheese crumbles optional
- For the Dressing:
- 3 tablespoons extra virgin olive oil
- 2 tablespoons red wine vinegar or fresh lemon juice
- 1 teaspoon honey or maple syrup
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 clove garlic minced
Prepare the Vegetables
