This Crisp Cucumber, Onion, and Tomato Salad is a refreshing, Mediterranean-inspired dish featuring crisp cucumbers, juicy tomatoes, and tangy red onions tossed in a light vinaigrette. Perfect as a side dish for grilled meats, barbecues, or a light, healthy snack!

Ingredients
  

  • 2 large cucumbers thinly sliced
  • 3 ripe tomatoes chopped or sliced
  • ½ red onion thinly sliced
  • ¼ cup fresh parsley or basil chopped
  • ¼ cup feta cheese crumbles optional
  • For the Dressing:
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar or fresh lemon juice
  • 1 teaspoon honey or maple syrup
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 clove garlic minced

Method
 

  1. Prepare the Vegetables
  2. Wash and dry the cucumbers, tomatoes, and parsley (or basil).
  3. Thinly slice the cucumbers and onions, and chop the tomatoes into bite-sized pieces.
  4. Make the Dressing
  5. In a small bowl, whisk together olive oil, red wine vinegar, honey, oregano, salt, pepper, and minced garlic until well combined.
  6. Assemble the Salad
  7. In a large mixing bowl, combine the cucumbers, tomatoes, and onions.
  8. Pour the dressing over the vegetables and toss gently to coat.
  9. Garnish and Serve
  10. Sprinkle chopped parsley or basil over the top.
  11. Add feta cheese crumbles if desired.
  12. Serve immediately or refrigerate for 15–30 minutes for enhanced flavor.
