Preparation
- Rinse the millet in a fine-mesh sieve under cold water to remove any dust.
- In a medium saucepan, combine the rinsed millet, water or milk, maple syrup or honey, vanilla extract, and salt.
Cooking
- Over medium-high heat, bring the mixture to a gentle boil.
- Once boiling, reduce the heat to low and cover. Allow it to simmer for about 20 minutes, or until the millet is tender and has absorbed most of the liquid.
- Stir every 5 minutes to ensure even cooking, which helps create the creamy texture.
- If the porridge is too thick, add a splash more water or milk until it reaches your desired consistency.
Serving
- Once done, spoon the porridge into bowls and add your favorite toppings, such as fruits, nuts, or a sprinkle of cinnamon.
Notes
For a nut-free option, use coconut or oat milk instead of dairy. The millet can be soaked overnight to enhance digestibility. Store in the refrigerator for up to 5 days or freeze for up to three months.
