Preparation
  1. Rinse the millet in a fine-mesh sieve under cold water to remove any dust.
  2. In a medium saucepan, combine the rinsed millet, water or milk, maple syrup or honey, vanilla extract, and salt.
Cooking
  1. Over medium-high heat, bring the mixture to a gentle boil.
  2. Once boiling, reduce the heat to low and cover. Allow it to simmer for about 20 minutes, or until the millet is tender and has absorbed most of the liquid.
  3. Stir every 5 minutes to ensure even cooking, which helps create the creamy texture.
  4. If the porridge is too thick, add a splash more water or milk until it reaches your desired consistency.
Serving
  1. Once done, spoon the porridge into bowls and add your favorite toppings, such as fruits, nuts, or a sprinkle of cinnamon.

Notes

For a nut-free option, use coconut or oat milk instead of dairy. The millet can be soaked overnight to enhance digestibility. Store in the refrigerator for up to 5 days or freeze for up to three months.
