CREAMY TOMATO SOUP RECIPE
Warm up with this creamy tomato soup recipe! It's rich, comforting, and easy to make with just a few simple ingredients. Perfect for dipping with grilled cheese or enjoying on its own.
- 2 tbsp olive oil
- 1 medium onion diced
- 2 garlic cloves minced
- 1 can 28 oz whole peeled tomatoes
- 2 cups vegetable or chicken broth
- 1 cup heavy cream or half-and-half for a lighter version
- 1 tsp sugar optional, to balance acidity
- Salt and pepper to taste
- Fresh basil leaves for garnish
- Croutons or grilled cheese for serving
Sauté Aromatics:
Heat olive oil in a large pot over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add garlic and cook for another 1-2 minutes, until fragrant.
Add Tomatoes and Broth:
Pour in the canned tomatoes, including the juices. Use the back of a spoon to break up the tomatoes a bit. Add the broth and stir to combine. Bring to a simmer and let cook for about 15-20 minutes, allowing the flavors to meld.
Blend the Soup:
Remove the pot from heat. Use an immersion blender to blend the soup until smooth, or carefully transfer it in batches to a regular blender.
Add Cream and Seasonings:
Return the pot to low heat and stir in the cream. Add sugar if the soup tastes too acidic. Season with salt and pepper to taste, adjusting as needed.
