For the soup
  • 4 large large yellow onions, thinly sliced Yellow onions are traditional but feel free to mix in some sweet onions.
  • 4 cloves cloves of garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon sugar
  • 8 cups beef or vegetable broth Use vegetable broth for a vegetarian version.
  • 1 cup cream
  • 1 tablespoon Worcestershire sauce Ensure it’s alcohol-free.
  • 2 cups grated Gruyère cheese
  • as needed slices crusty bread for serving

Method
 

Preparation
  1. Begin by peeling and thinly slicing the onions.
  2. Place the sliced onions and minced garlic into the slow cooker.
  3. Sprinkle the salt, black pepper, and sugar on top, ensuring that the onions are evenly coated.
Cooking
  1. Pour the beef or vegetable broth into the slow cooker and add the Worcestershire sauce.
  2. Cover the slow cooker and set it to low heat. Let it cook for about 8 hours.
  3. Stir in the cream and half of the grated Gruyère cheese. Let it cook for an additional 30 minutes.
Serving
  1. Ladle the soup into bowls, top with remaining cheese, and add a slice of crusty bread.
  2. Optionally, broil the topped bowls briefly for a golden crust.

Notes

For added flavor, you can include herbs like a bay leaf or thyme during cooking but remember to remove them before serving.
