Preparation
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine ground chicken, breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, beaten egg, and season with salt and pepper. Mix well.
- Scoop small amounts of the mixture and roll into meatballs, approximately 1-2 inches in size. Place on a baking sheet lined with parchment paper.
Cooking
- Bake the meatballs in the preheated oven for about 20 minutes, or until cooked through and lightly golden.
- While the meatballs are baking, melt butter in a skillet over medium heat. Stir in heavy cream, chicken broth, and Italian seasoning. Bring to a simmer and thicken slightly.
- Once the meatballs are cooked, place them in the skillet with the creamy sauce and gently toss to coat.
Serving
- Serve the meatballs over your favorite pasta or alongside warm bread.
Notes
For substitutions, ground turkey can be used as a lower-fat alternative. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for 3 months. Reheat gently to maintain moisture.
