  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese (plus more for topping, if desired)
  • 1 packet ranch seasoning mix (make sure it’s Halal)
  • 1 cup chicken broth
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Preparation
  1. Start by cutting your chicken breasts into bite-sized pieces to ensure even cooking.
Cooking
  1. In a large skillet or multi-cooker, add a splash of your favorite oil over medium heat.
  2. Add the diced chicken, season with salt, pepper, garlic powder, and onion powder. Cook until browned and no longer pink, about 8-10 minutes.
  3. Lower the heat and add the softened cream cheese into the skillet. Stir until melted and combined.
  4. Slowly pour in the chicken broth and sprinkle the ranch seasoning mix over the top. Stir until well combined.
  5. Mix in the shredded cheddar cheese and allow it to melt into the dish.
  6. Garnish with chopped green onions and serve over cauliflower rice, zucchini noodles, or on its own.

Notes

For substitutions, use homemade ranch seasoning with dried herbs or watch the heat to avoid scorching the cream cheese.
