  • 8 oz cream cheese, softened
  • 1 tablespoon chopped fresh dill Or to taste.
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 slices of bread Whole grain or white, your choice.

Preparation
  1. Start by washing and thinly slicing your cucumbers. If you prefer, you can peel them, but the skin adds extra crunch and color.
Making the Filling
  1. In a mixing bowl, combine the softened cream cheese, chopped dill, salt, and pepper. Blend until smooth and creamy.
Assembling the Sandwiches
  1. Lay out your slices of bread. Generously spread the cream cheese mixture on each slice. Place a layer of cucumber slices over half of the slices, then top with the other half to form sandwiches.
Serving
  1. Cut the sandwiches into triangles or quarters for easy eating. Serve them right away, or refrigerate if you're making them in advance.

Notes

For the freshest taste, assemble the sandwiches right before serving. You can prepare the filling and cucumbers ahead of time. To keep sandwiches crunchy, lightly toast the bread before spreading the filling. Store leftovers in an airtight container for up to 2 days.
