  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (4 oz) diced green chilies
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 cup heavy cream or sour cream
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Preparation
  1. Start by dicing the onion and mincing the garlic.
  2. Place the boneless chicken breasts at the bottom of the crockpot.
  3. Add the diced onion, minced garlic, drained white beans, corn, diced green chilies, cumin, and chili powder.
  4. Pour in the chicken broth, ensuring that everything is covered generously.
Cooking
  1. Set your crockpot on low for 6-8 hours.
  2. About 30 minutes before serving, remove the chicken, shred it with two forks, and return it to the pot.
  3. Stir in the heavy cream or sour cream, season with salt and pepper to taste.
Serving
  1. Ladle into bowls garnished with fresh cilantro and your favorite toppings.

Notes

For a heartier version, try adding diced bell peppers or zucchini. Cook on high for 3-4 hours if short on time but low is recommended for deep flavor development. Ensure to shred the chicken just before adding cream for optimal moisture.
