Ingredients
  

For the Sauce
  • 1 cup cottage cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • to taste Salt
  • to taste Pepper
  • 1/2 cup grated Parmesan cheese
  • Fresh herbs (such as basil or parsley), chopped
Pasta
  • 8 ounces pasta of your choice (spaghetti, penne, or any variety you prefer)

Method
 

Cooking the Pasta
  1. Boil a pot of salted water. Once it reaches a rolling boil, add your choice of pasta and cook according to package instructions. Drain and set aside, saving a cup of pasta water.
Preparing the Sauce
  1. In a medium skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant (about 30 seconds), being careful not to let it burn.
Blending the Sauce
  1. In a blender or food processor, combine the sautéed garlic, cottage cheese, grated Parmesan, salt, and pepper. Blend until smooth and creamy. If the sauce is too thick, add some reserved pasta water a tablespoon at a time until the desired consistency is achieved.
Combining
  1. Toss the cooked pasta in the skillet with the creamy cottage cheese sauce over low heat, ensuring that every noodle is beautifully coated.
Serving
  1. Garnish with freshly chopped herbs and an extra sprinkle of Parmesan before serving. Enjoy!

Notes

To save time, prep ingredients while the pasta cooks. Store leftovers in an airtight container in the refrigerator for up to 3-4 days, or freeze for up to a month.
