Method
Cooking the Pasta

- In a medium skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant (about 30 seconds), being careful not to let it burn.
Blending the Sauce
- In a blender or food processor, combine the sautéed garlic, cottage cheese, grated Parmesan, salt, and pepper. Blend until smooth and creamy. If the sauce is too thick, add some reserved pasta water a tablespoon at a time until the desired consistency is achieved.
Combining
- Toss the cooked pasta in the skillet with the creamy cottage cheese sauce over low heat, ensuring that every noodle is beautifully coated.
Serving
- Garnish with freshly chopped herbs and an extra sprinkle of Parmesan before serving. Enjoy!
