Preparation
- Start with shredded cooked chicken. This can be from a rotisserie chicken or boiled at home.
- In a medium bowl, combine the mayonnaise, plain yogurt, and Dijon mustard. Whisk until everything is well-blended and creamy.
- Toss in the chopped celery and halved grapes into the dressing. If you're feeling adventurous, add the chopped walnuts for an extra crunch!
- Add the shredded chicken to the bowl and mix thoroughly. Ensure every piece is coated in the delightful creamy mixture.
- Taste the mixture and add salt and pepper as needed.
- Spread a generous amount of the chicken salad on one slice of bread, add lettuce if desired, and top with another slice of bread.
- Cut your sandwich in half and enjoy it solo or alongside your favorite side dish like crunchy chips or a fresh salad.
Notes
Allow the salad to marinate for at least 10 minutes before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days. Can freeze for up to a month.
