  • 1 stalk celery, chopped
  • 1/4 cup red grapes, halved
  • 1/4 cup walnuts, chopped (optional) Can substitute with almonds or sunflower seeds.
  • Salt and pepper to taste
  • 4 slices bread (or lettuce for a low-carb option)
  • Lettuce leaves for serving (optional)

Preparation
  1. Start with shredded cooked chicken. This can be from a rotisserie chicken or boiled at home.
  2. In a medium bowl, combine the mayonnaise, plain yogurt, and Dijon mustard. Whisk until everything is well-blended and creamy.
  3. Toss in the chopped celery and halved grapes into the dressing. If you're feeling adventurous, add the chopped walnuts for an extra crunch!
  4. Add the shredded chicken to the bowl and mix thoroughly. Ensure every piece is coated in the delightful creamy mixture.
  5. Taste the mixture and add salt and pepper as needed.
  6. Spread a generous amount of the chicken salad on one slice of bread, add lettuce if desired, and top with another slice of bread.

Notes

Allow the salad to marinate for at least 10 minutes before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days. Can freeze for up to a month.
