Preparation
  1. Heat the olive oil in a large skillet over medium heat. Add the diced chicken and season with salt and pepper. Cook until browned and fully cooked, about 5-7 minutes. Remove and set aside.
  2. In the same skillet, add the diced onion. Sauté until translucent, about 3 minutes. Then add the minced garlic and cook for an additional minute until fragrant.
  3. Stir in the chicken broth and heavy cream, bringing the mixture to a gentle simmer. Add the spinach and cooked chicken, allowing everything to meld together for 5 minutes.
  4. Fold in the gnocchi. Cook until they float to the top and are heated through, about 3-4 minutes.
  5. Plate the dish, sprinkle with grated Parmesan cheese, and dig in!

Notes

Use fresh ingredients for enhanced flavor, and avoid overcooking the gnocchi. If the sauce is too thick, add a splash more chicken broth.
