Ingredients
  

  • Crust:
  • cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tbsp unsalted butter melted
  • Cheesecake Layer:
  • 2 8 oz packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup sour cream
  • Banana Pudding Layer:
  • 1 3.4 oz box instant banana pudding mix
  • cups milk
  • 2 ripe bananas sliced
  • Topping:
  • Whipped cream optional
  • Additional banana slices and vanilla wafers for garnish

Instructions
 

  • Step 1: Prepare the Crust
  • Preheat the oven to 325°F (163°C). Grease a 9x9-inch baking dish or line it with parchment paper.
  • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture resembles wet sand.
  • Press the mixture firmly into the bottom of the prepared baking dish to form a crust. Bake for 8-10 minutes, then remove from the oven and let it cool while you prepare the cheesecake layer.
  • Step 2: Make the Cheesecake Layer
  • In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream.
  • Pour the cheesecake filling over the cooled crust and smooth it into an even layer. Bake at 325°F (163°C) for 30-35 minutes, or until the center is set and the edges are lightly golden. Let it cool completely at room temperature, then refrigerate for at least 2 hours.
  • Step 3: Make the Banana Pudding Layer
  • In a mixing bowl, whisk together the banana pudding mix and milk until thickened, about 2 minutes.
  • Carefully spread the banana pudding over the chilled cheesecake layer, smoothing it out into an even layer.
  • Arrange banana slices over the top of the pudding layer, pressing them gently into the pudding.
  • Step 4: Assemble and Serve
  • Refrigerate the bars for an additional hour to allow the layers to set properly.
  • Before serving, top with whipped cream, extra banana slices, and crumbled vanilla wafers for a finishing touch.
