  • 200 g pasta (your choice)
  • 200 g feta cheese
  • 1 can chickpeas, drained and rinsed
  • 2 cups cherry tomatoes
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • to taste salt and pepper
  • Fresh basil for garnish
  • Red pepper flakes (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In an oven-safe dish, combine the chickpeas, cherry tomatoes, and minced garlic. Drizzle it all with olive oil. Sprinkle salt and pepper to taste.
  3. Nestle the feta cheese in the middle of the dish.
  4. Bake in the preheated oven for 25-30 minutes, or until the tomatoes burst and the feta is golden brown and melty.
  5. While that’s baking, cook the pasta according to package instructions until al dente. Drain and set aside.
  6. Once the feta and chickpea mixture is ready, remove it from the oven and use a fork to crumble the baked feta into the mix. Stir everything together until combined.
  7. Combine the pasta with the mixture, ensuring every piece is well coated.
  8. Garnish with fresh basil and a sprinkle of red pepper flakes, if desired.
  9. Serve immediately and enjoy!

Notes

For substitutions, feel free to swap in any of your favorite vegetables like spinach or zucchini. Pay attention while baking the feta and ensure your pasta is cooked al dente.
