Ingredients
  

  • 1 12-ounce bag fresh cranberries, rinsed and dried
  • 3/4 cup granulated sugar
  • 1 8-ounce package cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 8-ounce container whipped topping (or 2 cups whipped cream)
  • 1 cup mini marshmallows
  • 1/2 cup chopped pecans optional
  • Zest of 1 orange optional, for garnish

Method
 

  1. Prepare the cranberries
  2. Use a food processor or blender to finely chop the cranberries. Mix them with granulated sugar in a bowl, cover, and refrigerate for 1 hour to macerate.
  3. Mix the cream cheese
  4. In a large bowl, beat softened cream cheese and powdered sugar until creamy. Stir in vanilla extract.
  5. Combine the salad
  6. Gently fold the whipped topping into the cream cheese mixture until smooth. Add the macerated cranberries, mini marshmallows, and pecans (if using) and mix until well combined.
  7. Chill and serve
  8. Transfer the mixture to a serving dish, cover, and refrigerate for at least 2 hours before serving. Garnish with orange zest or additional pecans if desired.
