Preparation
- Preheat your oven to 450°F (232°C).
- In a large mixing bowl, combine the flour, baking powder, and salt, then whisk together.
- Blend in the cold cubed butter until the mixture resembles coarse crumbs.
- Gradually add the milk, stirring until just combined; avoid overmixing!
- In another bowl, mix together the crab meat, mayonnaise, Dijon mustard, Old Bay seasoning, lemon zest, and parsley.
- Turn the dough onto a floured surface, gently knead a few times, then roll it out to about ½ inch thick.
- Cut out rounds using a biscuit cutter.
- Place a spoonful of crab filling on half of the biscuit rounds, top with the remaining rounds, and seal the edges gently.
Baking
- Arrange the biscuits on a baking sheet and brush the tops with melted butter.
- Bake for 12-15 minutes or until golden brown.
- Once out of the oven, drizzle with lemon juice and serve warm.
Notes
Don’t overwork the dough to keep biscuits light and fluffy. Use fresh crab for best flavor and experiment with seasonings.
