Ingredients
  

Seafood Base
  • 1 lb crab meat Fresh crab meat is recommended for best flavor.
  • 1 lb shrimp, peeled and deveined Use fresh shrimp for optimal taste.
Creamy Mixture
  • 1 cup cooked rice Can use brown rice for a healthier option.
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped onion
  • 1/2 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
Topping
  • 1/2 cup breadcrumbs (optional, for topping) Adds a nice crunch.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine cooked rice, crab meat, shrimp, chopped onion, diced bell pepper, minced garlic, sour cream, shredded cheddar cheese, lemon juice, salt, and pepper. Mix until well combined.
  3. Pour the mixture into a greased casserole dish, spreading it evenly.
  4. If desired, sprinkle breadcrumbs over the top.
Baking
  1. Place the casserole in the oven and bake for about 30-35 minutes or until the top is golden and the mixture is bubbly.
  2. Allow to cool slightly before serving.
Serving
  1. Serve generous portions and enjoy the delighted reactions at the table.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. To reheat, place in the oven at 350°F (175°C) for 15-20 minutes. Can be frozen for up to three months.
