Ingredients
  

Cookie Base
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups old-fashioned oats
  • 1 cup chocolate chips

  • 1 cup chopped nuts Optional
  • 1 cup shredded coconut Optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 3-4 minutes.
  3. Add the eggs into the mixture, one at a time, and then add the vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet mixture, stirring gently until just combined.
  5. Fold in the old-fashioned oats, chocolate chips, and any optional ingredients like nuts or shredded coconut until well blended.
Baking
  1. Use a cookie scoop or tablespoon to drop cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  3. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

To store leftovers, place cookies in an airtight container at room temperature for up to a week. Freeze for up to three months. Reheat in a preheated oven at 350°F (175°C) for a few minutes.
