Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 3-4 minutes.
- Add the eggs into the mixture, one at a time, and then add the vanilla extract, mixing until well combined.
- In another bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet mixture, stirring gently until just combined.
- Fold in the old-fashioned oats, chocolate chips, and any optional ingredients like nuts or shredded coconut until well blended.
Baking
- Use a cookie scoop or tablespoon to drop cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
To store leftovers, place cookies in an airtight container at room temperature for up to a week. Freeze for up to three months. Reheat in a preheated oven at 350°F (175°C) for a few minutes.
