  • 4 large large eggs
  • 1/2 cup cottage cheese, preferably low-fat or full-fat Based on preference
  • 1 tablespoon butter or olive oil for cooking Use for sautéing the eggs
  • to taste salt
  • to taste black pepper

  • Chopped fresh herbs (such as chives or parsley) For serving

Method
 

Preparation
  1. In a mixing bowl, crack open the 4 large eggs.
  2. Gently stir in 1/2 cup of cottage cheese along with a pinch of salt and black pepper. They don’t need to be perfectly combined at this stage.
Cooking
  1. In a non-stick skillet, melt 1 tablespoon of butter or warm 1 tablespoon of olive oil over medium heat, being careful not to let the butter brown.
  2. Once the butter has melted, pour the egg and cottage cheese mixture into the skillet. Allow to sit for a few seconds before gently stirring with a spatula.
  3. Begin to scramble the eggs by gently moving them from the edges of the pan towards the center. Continue stirring until they are just set, which should take about 4–5 minutes.
Serving
  1. Once the eggs are creamy and fluffy, remove from heat. Top with your favorite fresh herbs, and enjoy!

Notes

For added flavor, consider sprinkling your favorite cheese like feta or cheddar. Avoid high heat to maintain fluffiness, and store leftovers in an airtight container for up to 3 days.
