  • 1 cup cottage cheese Use fresh for better taste.
  • 1 cup all-purpose flour Can substitute with whole wheat flour.
  • 1 large egg
  • 1 teaspoon baking powder
  • to taste salt
  • Olive oil or cooking spray for the skillet

Method
 

Preparation
  1. In a large mixing bowl, combine the cottage cheese, egg, flour, baking powder, and salt. Stir until all ingredients are well-mixed and form a dough. If the mixture feels too sticky, add a bit more flour.
  2. Dust a clean surface with a little flour and knead the dough gently for about 1-2 minutes until it's smooth.
  3. Divide the dough into equal portions based on how large you want your flatbreads. Roll each portion into a ball.
  4. Using your hands or a rolling pin, flatten each ball to your desired thickness (about 1/4 inch thick works well).
Cooking
  1. Heat a skillet over medium heat and lightly grease it with olive oil or cooking spray.
  2. Place the flattened dough in the skillet and cook for about 2-3 minutes on each side until golden brown and slightly puffy.
  3. Remove the flatbreads from the skillet and serve them warm.

Notes

Store any leftover flatbreads in an airtight container in the refrigerator for up to 3 days or freeze for longer storage. Reheat in a skillet or oven before serving.
