Preparation
- In a large mixing bowl, combine the cottage cheese, egg, flour, baking powder, and salt. Stir until all ingredients are well-mixed and form a dough. If the mixture feels too sticky, add a bit more flour.
- Dust a clean surface with a little flour and knead the dough gently for about 1-2 minutes until it's smooth.
- Divide the dough into equal portions based on how large you want your flatbreads. Roll each portion into a ball.
- Using your hands or a rolling pin, flatten each ball to your desired thickness (about 1/4 inch thick works well).
Cooking
- Heat a skillet over medium heat and lightly grease it with olive oil or cooking spray.
- Place the flattened dough in the skillet and cook for about 2-3 minutes on each side until golden brown and slightly puffy.
- Remove the flatbreads from the skillet and serve them warm.
Notes
Store any leftover flatbreads in an airtight container in the refrigerator for up to 3 days or freeze for longer storage. Reheat in a skillet or oven before serving.
