Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it with cooking spray or lining it with silicone muffin cups.
  2. In a mixing bowl, whisk together the eggs and cottage cheese until well combined. The mixture should be smooth and slightly fluffy.
Mixing
  1. Gently fold in the shredded cheese, chopped vegetables, salt, and pepper. Feel free to get creative with your add-ins!
Baking
  1. Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  2. Place the muffin tin in the preheated oven and bake for about 20-25 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
Serving
  1. Let the bites cool for a few minutes in the tin before transferring them to a wire rack. Enjoy warm on their own or with toppings of your choice!

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. To reheat, microwave for 30-45 seconds or bake in a preheated oven at 350°F (175°C) for about 10 minutes.
