- Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it with cooking spray or lining it with silicone muffin cups.
- In a mixing bowl, whisk together the eggs and cottage cheese until well combined. The mixture should be smooth and slightly fluffy.

- Gently fold in the shredded cheese, chopped vegetables, salt, and pepper. Feel free to get creative with your add-ins!
Baking
- Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Place the muffin tin in the preheated oven and bake for about 20-25 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
Serving
- Let the bites cool for a few minutes in the tin before transferring them to a wire rack. Enjoy warm on their own or with toppings of your choice!
