  • 1 cup cottage cheese Use low-fat or full-fat as preferred.
  • 4 large eggs Organic or free-range recommended.
  • 1 cup chopped spinach Feel free to substitute with any vegetables.
  • 1 cup shredded cheese Cheddar, mozzarella, or your favorite cheese.
  • Salt and pepper to taste

  • Diced bell peppers For added sweetness.
  • Green onions For extra flavor.
  • Herbs For added freshness and nutrition.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease a muffin tin or use silicone muffin cups to prevent sticking.
  3. In a large mixing bowl, combine cottage cheese, eggs, chopped spinach, shredded cheese, salt, and pepper. Mix until fully blended.
  4. Carefully pour the mixture into the prepared muffin tin, filling each cup about three-quarters full.
Baking
  1. Place the muffin tin in the oven and bake for about 20 minutes or until the bites puff up and are set in the middle.
  2. Allow the egg bites to cool for a few minutes before carefully removing them from the muffin tin.
  3. Enjoy warm or at room temperature!

Notes

Experiment with mix-ins like cooked turkey or mushrooms for variety. Store leftovers in an airtight container for up to 4 days, or freeze for up to 3 months.
