Preparation
- Preheat the oven to 375°F (190°C).
- Lightly grease a muffin tin or use silicone muffin cups to prevent sticking.
- In a large mixing bowl, combine cottage cheese, eggs, chopped spinach, shredded cheese, salt, and pepper. Mix until fully blended.
- Carefully pour the mixture into the prepared muffin tin, filling each cup about three-quarters full.
Baking
- Place the muffin tin in the oven and bake for about 20 minutes or until the bites puff up and are set in the middle.
- Allow the egg bites to cool for a few minutes before carefully removing them from the muffin tin.
- Enjoy warm or at room temperature!
Notes
Experiment with mix-ins like cooked turkey or mushrooms for variety. Store leftovers in an airtight container for up to 4 days, or freeze for up to 3 months.
