Preparation
- Preheat your oven to 350°F (175°C).
- Grease a loaf pan with cooking spray or light oil.
- In a large mixing bowl, combine the cottage cheese, eggs, and vanilla extract, stirring until well blended.
- In a separate bowl, whisk together the almond flour, sweetener, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture and stir until smooth.
- Gently fold in the blueberries.
- Pour the batter into the greased loaf pan and smooth the top.
- Bake in the preheated oven for 45-50 minutes, or until a toothpick comes out clean from the center.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For variations, substitute other berries like raspberries or blackberries. Store in an airtight container in the refrigerator for up to 5 days or freeze for 3 months.
