This easy Corn Casserole is a creamy, cheesy, and buttery side dish that's perfect for holiday dinners, potlucks, or any gathering. With just a few ingredients, it’s a crowd-pleaser every time!

Ingredients
  

  • 1 15-ounce can whole kernel corn, drained
  • 1 15-ounce can creamed corn
  • 1 cup sour cream
  • ½ cup unsalted butter melted
  • 1 8.5-ounce package cornbread mix (e.g., Jiffy)
  • 1 cup shredded cheddar cheese
  • ½ teaspoon salt optional, to taste
  • ½ teaspoon black pepper
  • Fresh parsley or chives chopped (optional, for garnish)

Instructions
 

  • Preheat the Oven:
  • Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with non-stick spray.
  • Mix the Ingredients:
  • In a large mixing bowl, combine the whole kernel corn, creamed corn, sour cream, melted butter, and cornbread mix. Stir until just combined.
  • Add the Cheese and Seasoning:
  • Fold in the shredded cheddar cheese, salt, and black pepper. Mix gently to distribute the cheese evenly.
  • Pour and Spread:
  • Pour the mixture into the prepared baking dish. Use a spatula to spread it out evenly.
  • Bake:
  • Bake for 45–50 minutes, or until the top is golden brown and the center is set. A toothpick inserted into the center should come out clean.
  • Garnish and Serve:
  • Let the casserole cool for 5 minutes before serving. Garnish with fresh parsley or chives if desired.
