Pasta and Base Ingredients
  • 12 ounces pasta (your choice: fettuccine, linguine, or penne)
  • 3 large onions, thinly sliced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup mozzarella cheese, shredded
  • ½ cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)

Method
 

Cooking the Pasta
  1. Start by cooking your pasta according to the package instructions. Drain and set aside, reserving a cup of pasta water.
Caramelizing the Onions
  1. In a large skillet, melt the butter and olive oil over medium heat. Add the sliced onions and a pinch of salt, stirring occasionally. Cook for about 15-20 minutes until they are golden and caramelized.
Adding Garlic
  1. Once the onions reach a beautiful caramel color, stir in the minced garlic and cook for another minute until fragrant.
Creating the Sauce
  1. Pour in the vegetable broth and bring it to a simmer. Allow it to reduce for about 5 minutes. Then, add the heavy cream and season with salt and pepper.
Mixing in the Cheese
  1. Stir in the mozzarella and Parmesan cheese until beautifully melted and combined.
Combining Pasta and Sauce
  1. Add the cooked pasta into the sauce, tossing gently. If it's too thick, add some reserved pasta water until you reach your desired consistency.
Garnishing and Serving
  1. Top with fresh thyme or additional cheese if desired, and serve warm!

Notes

Chill onions before cutting to minimize tears; consider using Gruyère cheese for added flavor. For extra depth, add balsamic vinegar or sautéed mushrooms.
