Preparation
- Start by chopping the cabbage, dicing the onion, carrots, and celery, and mincing the garlic. Having everything ready to go makes the cooking process much smoother.
Cooking
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Once hot, add the diced onion, celery, and carrots. Sauté for 5-7 minutes, or until the veggies are tender and fragrant.
- Stir in the minced garlic, dried thyme, and paprika. Cook for an additional minute to release those flavors.
- Add the chopped cabbage, vegetable broth, and diced tomatoes (with their juices) to the pot. Season with salt and pepper to taste.
- Increase the heat and bring the mixture to a boil. Once boiling, reduce heat and let it simmer for 20-25 minutes, or until the cabbage is tender.
- Before serving, taste the soup and adjust the seasoning as necessary.
- Ladle the soup into bowls, and if you’d like, top with fresh herbs or a dollop of yogurt for added flavor.
Notes
If you're lucky enough to have leftovers, you can store your Comforting Cabbage Soup in an airtight container in the refrigerator for up to 5 days. Reheat it gently on the stove, adding a splash of water if it thickens too much. You can also freeze the soup for up to 3 months! Just thaw it overnight in the fridge and heat it on the stove when you’re ready to enjoy it again.
